Happy Holidays! We’re getting close! And today, we continue our Countdown to Christmas with author Marlow Kelly!
Although I come from a large Irish family, Christmas at our house is a quiet event. I live in Alberta, Canada with my husband of twenty years and our two children. My Mom, sisters and cousins all live in England and Ireland. My husband is almost as bad, where we live in the west, his mother and brother live in Ontario and Nova Scotia – eastern Canada.
We have the usual trappings of Christmas; a tree, presents, giving to others and lots of good cheer, but food plays an important role in our festivities. I know that sounds bad, but what you have to understand is that we don’t have cookies and cakes in the house as a rule.
Why? Because I have a sugar problem… Once I start eating sugar I can’t stop.
The other reason we don’t have a lot of goodies in the house is because my youngest child is allergic to peanuts and most baked goods are out of bounds. This means if we want cinnamon buns, scones, or cakes I have to bake them and who has the time. Plus it suits my waistline, and blood sugar level, to do without.
So on Christmas we make up for lost time and bake. We also try all sorts of goodies we wouldn’t normally eat.
We start the day with a buffet breakfast that will include fruit, fresh-baked cinnamon rolls, banana bread, and cookies.
Then lunch will be another buffet of veggies and dip, spiral sandwiches, mini quiche, and Hors d’oeuvre sized salmon wellington – yum
Then we have the traditional turkey dinner and for dessert we will have homemade, peanut-free chocolate cream pie. I know chocolate cream pie isn’t your traditional Christmas dessert, but we’ve never been fruitcake people.
I finish the day sipping a Kahlua liqueur while my husband and kids do the dishes.
I thought those of you who suffer with nut / peanut allergies might enjoy my recipe for peanut-free chocolate cream pie. This is a no-bake recipe that can be made the day before and kept in the fridge.

Chocolate Cream Pie
I pack peanut-free chocolate cookies
¼ butter melted
2 cups peanut free chocolate chips (I use Enjoy Life brand)
½ cup canned sweetened condensed milk
2 pkg. (4 people serving sized) chocolate pudding mix (I use Jell-O and although I’ve never had a problem, please remember to always read the label.)
2 cups 2% milk
2 cups cool whip lite.
This pie is comprised of 4 different chocolate layers. Start from the bottom and work up. This is an easy recipe that doesn’t need to be rushed. It is also an excellent choice if you have little hands helping you.
Crush the cookies and mix with the melted butter. Shape into the bottom and sides of an 8inch pie dish.
Melt chocolate chips in microwave. (Do not allow to boil.) Mix with sweetened condensed milk and pour over the crumb crust.
1st Pudding layer:
Pour pudding mixes and milk in a large bowl and whisk for 2 minutes until thick. Divide pudding. Spread half of the mix on top of the melted chocolate layer.
2nd Pudding Layer
Gently stir the remaining pudding with ½ the container of Cool Whip and spread on top of the pie.
Allow to cool for at least 2 hours in the fridge.
Before serving add the remaining Cool Whip.
